Grown on the misty slopes of central Taiwan, Dong Ding is traditionally medium-to-heavily oxidized and roasted, a style that bridges the brightness of green oolong and the richness of darker teas. The rolling and repeated roasting coax sugars and aromatic oils to the surface of the leaf, creating depth without sacrificing clarity.

This craftsmanship produces a tea known for its balance: floral high notes layered over warm, baked sweetness. The roast transforms fresh leaf compounds into aromas reminiscent of caramel, toasted grain, and ripe stone fruit.

The first infusions are smooth and rounded, offering honey, roasted chestnut, and hints of orchid. With longer steeps, deeper flavors of brown sugar, baked pear, and gentle spice unfold, supported by a creamy mouthfeel and a lingering, comforting warmth.

Tradition and harmony come together in this limited-harvest Dong Ding Traditional Oolong.

Cultivated in the rolling hills of Nantou County, Taiwan, this tea represents the heart of Taiwan’s oolong craft - smooth, balanced, and quietly complex.

Each leaf reflects generations of refinement, offering a rounded sweetness and gentle warmth that have made Dong Ding a favorite among tea lovers for more than a century.

Background of the tea

Dong Ding Oolong originated from the slopes of Lugu Village in Nantou County—Taiwan’s historic heart of tea culture.  Farmers there have refined the roasting process for more than a century, creating teas cherished for depth and warmth.

This 2025 harvest was roasted under the guidance of Master Fang, whose family has produced Dong Ding for generations.

Brewing Guide

. Leaf ratio: 1 g tea / 50 mL water (≈ 4 g per 6 oz cup)

  • Water: 92 – 96 °C (198 – 205 °F)
  • Rinse: Quick 5 sec to awaken leaves
  • Steep 1: 45 sec  |  Steep 2: 35 sec  |  Steep 3+: +10 sec each
  • Flavor note: Expect gentle roasted caramel, chestnut, and baked apple sweetness.
